Kuhn Rikon Easy Induction

Kuhn Kikon is a family owned Swiss company and is world-renowned for its cookware. They have been based in Rikon since 1926.

We carry the Easy Induction line and this is the most budget-friendly fry pans we have. The lightweight pans are made from five layers of forged aluminum (remember, aluminum is an excellent conductor of heat) with a non-stick interior and a hard outer coating. These fry pans have an extra this 5mm full induction base for even heating on all surfaces. The durable three-laying interior is reinforced with titanium particles and is PFOA free.

The handles are made of bakelite and are oven save up to 428F. Remember to use hand protection when pulling a pan from the oven. Also, be sure that the handle is not exposed to any open flames in the oven or on the stovetop.

These pans are dishwasher safe but also clean up easily with hot, soapy water and a soft cloth or sponge. A nylon brush can be used, if needed, but abrasive cleaning agents or implements are not recommended.

Silicone or wooden utensils are best with these pans. No knives or sharp items should be used.

Don’t heat the empty pan and bring the pan gradually up to the desired temperature.

Evaco/Cast Ceramica ART

Evaco/Cast Ceramica ART fry pans and stir fry pans are finely balanced between comfortable weight and cooking performance. They are cast in one solid piece of aluminum with extra weight at the base and tapered sides in a lighter gauge. The pans cannot warp and may be cleaned in the sink, hot off the stove. They are also dishwasher safe.

Features unique to these pans include asymmetrical sloping rims (that facilitate tossing and flipping of the ingredients) and heat-absorbing base-grooves. The grooves make the pans one step more energy efficient on gas flames. Also, the bases are magnetized so that the pans work on ALL cooktops – including “induction”.

Since aluminum is a superb heat-conductor with rapid and even heat-distribution (quite similar to solid copper), the “medium” heat-setting is sufficient for most cooking purposes. But these pans can withstand temperatures up to 900F which is very helpful for fast, hot stir-frys and for people who tend to cook on too high a temperature on a regular basis.

Cook faster, they said. Use higher heat, they said. It won’t hurt your pans, they said. They were right! But ONLY with Evaco/Cast pans!

Metal tools are forbidden. Use instead wood, bamboo, silicone, nylon, or heat-resistance plastic.

Ceramica-ART is made from purified sand, rock and ceramic. The non-stick surface cleans in seconds and has a heat-tolerance of over 900° Fahrenheit (nearly twice that of PTFE non-stick, aka Teflon) and the highest in the non-stick industry. With the right tools and treated properly, Ceramica-ART will provide many years of easy cleaning.

No gasses or fumes are ever emitted at ANY cooking temperature. The non-stick contains none of the components used for making PTFE non-stick and is safe for unrestricted food-storage, dishwashers and aerosol cooking sprays. Ceramica-ART non-stick is a non-porous glass surface that tolerates rapid cooling and heating. Its fine “food release” properties are the result of an ultra-smooth surface. To retain maximum food-release properties, never using metallic tools or abrasive scouring pans (scouring pads approved for non-stick are fine). Most sticking issues are caused by failure to clean with soap after each and damage to the non-stick by metal tools and metallic scouring pads. The pans are superb conductors of heat and too high heat is also a common reason for sticking.

Carbon steel pans have been a favorite of chefs all over the world and these pans have all those qualities that chefs love: durability, non-stick (after seasoning), and even heating. In fact, the pans will begin to look old and used and black over time but they get more and more seasoned and become more and more non-stick. Those who use them, swear by them. As non-stick pans go, the only real drawback is that they are on the heavier side compared to other non-stick pans on the market.

Carbon steel is a versatile material which is 99% iron and 1% carbon. This formulation makes these pans less brittle than full cast iron and allows for thinner construction. The thinner construction allows for faster heating but still retains the ability to maintain even heating.

The Kitchen Company carries the Mineral B line of fry pans and country pans by de Buyer. Mineral B pans are made in France. The de Buyer factory has been in operation since 1830, and mixes tradition and state-of-the art technology to create pots and pans that will literally last a life time. The pans are sold with a protective beeswax coating and are UN-seasoned; however, seasoning is easy and a non-stick coating good enough to scramble an egg can be achieved with just one round of seasoning.

Kyocera Ceramic Non-Stick

Kyocera is a Japanese company making ceramics and electronics. The company was founded in 1959 in Kyoto specializing in fine ceramics. We carry these budget-friendly fry pans in three sizes: 8”, 9.5” and 12”.

These lightweight pans have a proprietary ceramic nonstick coating and can be used on gas, electric, ceramic, and induction cooking surfaces. The nonstick serface is PTFE- and PFOA-free and contains no cadmium. Low or medium heat is recommended (high heat should not be used and will cause food to stick to the pan). The cookware heats evenly and offers excellent thermal conductivity and heat retention. These pans are oven safe up to 400F

It is best not to use any cooking sprays as they cause build-up over time and will reduce the effectiveness of the the nonstick surface. Lightly coat the inside of the pan with oil at the start of the cooking process unless the food being cooked is high in fat. Do not let the empty pan sit on a hot stove top or burner.

Metal utensils can scratch and damage the surface so use only wood, silicone, nylon or plastic utensils with these pans.

Clean up is easy; rinse the pan in warm water promptly after cooking to remove rood and grease. Do not use any abrasive cleaners or chlorine bleach. Soak in warm water for 30 minutes if needed. Avoid using the dishwasher.

If the pan becomes difficult to clean, there may be a layer of carbonized fat or oil on the surface covering the nonstick surface. This will also cause food to stick. If this happens, use warm water and scrub the surface with a melamine sponge. The layer should come off.

Zwilling Clad CFX

This cookware by Zwilling features Ceraforce XTREME ceramic nonstick over stainless steel pans with a 3mm aluminum core. The nonstick coating is PFOA-free and non-toxic.

These are not as lightweight as some of the others but they are durable. At 10x more scratch-resistant, metal utensils can be used safely (although most people won’t).

These pans are compatible with all cooking surfaces and are oven safe up to 400F. They feature comfortable handles and handy pour spouts (not on the fry pans).

Cleanup is easy as these pans are dishwasher safe.

The manufacturer’s website doesn’t specify the following, but these are observations that have been made in real life:

  • not for use with high heat
  • don’t use fake fats or spray fats that contain aerosols
  • surface scratches will not affect the nonstick ability of the pan
